Perfect for cooking large batches of soup, stew, sauces, and rice, the Groen tilting kettle has a 40-quart (10-gallon) capacity. A hollow area in the kettle body between the interior and exterior called the jacket is filled with water that forms steam when heated. This cooking method is more efficient than a stock pot on a range while providing a more even heat pattern. Using a self-contained steam source, the unit does not require a generator or boiler to operate. Its temperature is adjustable—with a range between 150 and 295 degrees Fahrenheit—and a control knob enables the operator to set this level at an ideal setting from 1 through 10.
